		<description>Hi, I came across your informative blog in my scone research.  To ensure minimal gluten development, can you use cake flour as well?  A lot of European recipes also call for self-rising flour with an additional dose of baking powder.  Is self-rising flour absolutely necessary?  Thanks!</description>
