There are several different variations from Scotland, Germany, and don&#8217;t forget the Dutch. here is a recipe that I have put together for you to try. They are very nice if you are a chocolate, and raspberry lover like myself.</p>
<p>Chocolate Raspberry Scones</p>
<p>2 Cups all purpose flour</p>
<p>1/3 Cup sugar</p>
<p>1 Teaspoon of baking powder</p>
<p>1/2 Teaspoon of baking soda</p>
<p>1/2 Teaspoon of salt</p>
<p>3 Ounces of butter, cut into pieces</p>
<p>1/2 Cup of dark chocolate chips</p>
<p>1/2 Cup of milk chocolate chips</p>
<p>1/2 Cup milk</p>
<p>1 Teaspoon of vanilla bean paste</p>
<p>1 Large egg, lightly beaten</p>
<p>1 Cup raspberries</p>
<p>1 Large egg, lightly beaten</p>
<p>Egg Wash</p>
<p>2 Tablespoons of milk</p>
<p>1 Large egg</p>
<p>First you will preheat oven to 375F. Then you will first whisk together the flour, sugar, baking powder, baking soda and salt. Make sure that you do not get the measurements backwards for the baking soda, and the baking powder. Trust me it will be a very bad tasting scone if you do. It will be more like a raspberry chocolate brick.</p>
<p>You will then start to cut in the butter the into the flour mixture with a pastry blender if you have one, or a food processor with a dough blade will work as well. If you do not have either you can use two knives, or a fork until crumbly. You will then add your chocolate chips into the dough mix and give it a light stir.</p>
<p>In a small mixing bowl you will then add the milk, vanilla bean paste, and the slightly beaten egg. One you have given the liquid mixture a little stir you will start to add the liquid mixture to the flour mixture and stir just until the dough comes together. Do not over work or over mix you dough it, will not let the scone rise properly during baking if you do. The scone will be very dense if this happens.</p>
<p>You will take the crumbly dough mixture and knead very gently on a lightly floured surface 3 to 5 times, or until it comes together. You will then pat the dough into a circle that is about 1 inch thick. You will then cut your scones into the desired shape. You can use a round cookie cutter, or any metal ring design, or squares if you prefer.</p>
<p>You will then place the scones on a lightly greased baking sheet, or one that has been prepared with a nonstick spray. Make the egg wash, and brush the tops with this mixture you will then add some regular sugar on top and bake.</p>
<p>Bake for about 10 minutes and then turn 180 degrees and then continue for another 10 minutes. The total cooking time should take about 20 minutes or until golden brown. Remove scones from oven and place on a wire rack to cool. Once they have cooled you can add your raspberries on top for garnish sprinkled with a little sugar. These are delicious.</p>

<p>Preparation<br />
Take a large bowl and place some oatmeal with butter and honey and sprinkle some salt over it. Pour some boiling water over it and stir well and let this preparation cool down. Then, sprinkle some yeast over the very warm water. Add some sugar to this and stir it carefully. Place it aside till it turns bubbly. Meanwhile, use some vegetable oil to spray a 9 X 5 X 3 inch pan. Add the yeast mixture along with the egg, 1 ½ cups of the flour and the oat bran cereal flour to the oatmeal mixture. You need to beat this mixture on low speed for around 2 minutes. The whole of the United Kingdom is famous for its scones, but I still maintain that Scottish cooks produce the best. You will find many different varieties, from plain scones, fruit scones, cherry scones, date scones and savoury cheese scones. You can buy them in Bakers&#8217; Shops and supermarkets everywhere, and I doubt if you will find a coffee shop in the land, which does not have scones on the menu. Restaurants which serve the traditional Scottish ‘High Tea’ will almost always have freshly-baked scones as part of the meal.</p>
<p>Of course in Scotland we also have other ‘scones’ which are totally different, such as the Potato Scone (probably the Scottish equivalent of Hash Browns) which is usually served with a cooked breakfast; and we also have &#8216;drop scones&#8217;, which are made with a batter-like mixture using a griddle (or girdle) but are called Scotch Pancakes. There are other types of scones such as Treacle Scones, Soda Scones, and whole-meal scones. All of these as well as Potato (or Tattie) Scone and the Drop Scone are not what I am describing as a traditional Scottish Scone.</p>
<p>The recipe below is one of the simplest yet best Scottish scone recipe you will find, and is not hard to make. This is the ‘plain’ version, and both the plain and the fruit scone are served with butter; although for a real treat, serve them with delicious homemade jam such as strawberry or raspberry, and of course whipped or clotted cream. They are best served warm, and of course served with a nice pot of tea.</p>
<p>Ingredients</p>
<p>8oz / 225g self-raising flour<br />
1oz / 25g caster sugar<br />
large pinch of salt<br />
5fl oz / 150ml milk</p>
<p>Method</p>
<p>Mix the flour and salt together and rub in the butter.<br />
Mix in the sugar, then the milk until the dough is soft.<br />
Turn on to a floured board and knead very lightly.<br />
Make a round roughly ¾ in / 2cm thick.<br />
Using a scone cutter (about 2in / 5cm) cut into rounds and place on a lightly greased baking sheet.<br />
Lightly knead together the rest of the dough and continue cutting more scones to use up all the dough.<br />
Brush the tops of the scones with a little milk (or beaten egg).<br />
Bake for around 12-15 minutes in preheated oven (220C/425F) until golden and well risen.</p>
<p>Cool on a wire rack and serve with butter and homemade raspberry jam and maybe some whipped or clotted cream while still warm.</p>
<p>The recipe can be adapted to include sultanas or other dried fruit; or with cheese to make a savoury version.</p>

<p>There are so many options here. With today’s computer programs you can make some beautiful ones at home. Tuck an actual tea bags in the invitation. Perhaps make some using paper doilies &#038; scrapbooking supplies.</p>
<p>DECORATING &#038; SERVING</p>
<p>You will want to make the house as pretty as possible. Fresh flowers are a must, use them everywhere. I had a birthday tea in early June &#038; I put vases of peonies everywhere, they are beautiful. Use traditional vases, or teapots that no longer have lids. Sometimes you can find then for a bargain since they no longer have a lid! Use candles both tapers &#038; scattered votives or tea lights. I use some of those fancy shaped Christmas light that are sold now in all kinds of shapes. I have some pretty heart ones &#038; some flower ones &#038; even some dragonfly lights ( those are for the fairy tea party - see my page on fairy tea parties) Play soft music in the background. There are even tea party music CD’s you can purchase. For tablecloths try lace or damask. Scatter silk rose petals on your table. Use real linen or fancy paper napkins. I found some monogrammed napkins at an antique store in California last year. They were inexpensive I guess because not too many people have an &#8220;O&#8221; monogram.</p>

<p>Demitasse or Fancy Spoons</p>
<p>You don’t need to spend a lot of money. You can find some great bargains at your local thrift stores, flea markets &#038; antique malls. Mix &#038; Match is Definitely OK for teacups &#038; saucers. Even mismatched sets are OK. Some I have been given as gifts, but most are from estate sales or thrift stores. I have at least 24 mix &#038; match cups &#038; saucers.</p>
<p>I love the pedestal cake plates or the tiered serving pieces. I have several I purchased at the Salvation Army. I bought a vintage Hobnail cake plate for $1. It has a repair on the pedestal part , but I cover with appropriate fancy ribbon! Be sure you use lots of scented candles, be creative with your candle holders. Use paper or tatted doily under or on your serving pieces.Be sure you have a nice glass or crystal on hand for water. Maybe not all of your guests drink tea.</p>
<p>To use for serving sugar or with teacups, or as party favors, be sure to see some of the demitasse spoons I sell. Aren’t they sweet! Tie them up to a tea bag with a little satin ribbon &#038; you have a darling tea party favor. If you can find some bargains, give each guest a fancy teacup to take home.</p>
<p>YUMMY FOOD TO SERVE</p>
<p>Offer your guests a variety of tea flavors. I leave them out in a lined basket. It is fun to use decorated sugar cubes &#038; sugar tongs too!</p>
<p>TEA SANDWICHES</p>
<p>There are many varieties of tea sandwiches you can serve. Try to find a firmer style bread, cut the crust off &#038; cut sandwiches either diagonally so you have 2 triangle sandwiches or in 4’s for a bit smaller sandwiches. Cucumber sandwiches have long been a tea party tradition. This is an easy one that everyone likes. Just spread softened cream cheese on bread &#038; top with thinly sliced cucumbers. Simple. For a fall or Christmas time tea try turkey &#038; cranberry sauce sandwiches. Use your favorite egg salad or chicken salad recipe. try adding sliced almonds to your chicken salad recipe, yum! For other fillings you can use, watercress, tomatoes, cheese, deli meats, smoked salmon or ham salad. For Children spread softened cream cheese on bread &#038; top with jelly, cut with cookie cutter. On top of the sandwich spread just a bit of softened cream cheese &#038; dust with sprinkles.</p>
<p>SCONES BISCUITS COOKIES &#038; CAKES</p>
<p>You cannot have a Victorian Tea Party without scones. You can find a variety of scone recipes on the internet. I have used scone mixes before as well. If you have a Panera Bread Store in your area, they have wonderful orange scones. You might like to have traditional devonshire cream, lemon curd or jelly or jams for your scones &#038; biscuits.</p>
<p>Lemon Curd Recipe:</p>
<p>    * 3 eggs<br />
    * 1/2 cup fresh lemon juice<br />
    * 1/2 cup salted butter<br />
    * 1 cup sugar</p>
<p>Mix together melted butter &#038; sugar. Add well beaten eggs &#038; lemon juice. Place in double boiler or over simmering water. Stir continuously for 15 minutes or until thick. Allow to cool &#038; refrigerate. Will keep for about 2 weeks.</p>
<p>Traditional Tea Cakes Recipe:</p>
<p>    * 4 cups flour<br />
    * 1 cup butter<br />
    * 2 egg yolks, beaten<br />
    * milk<br />
    * 1 egg white, beaten<br />
    * 1/4 cup sugar<br />
    * Caraway seeds</p>
<p>Mix all ingredients together, mix to paste with a little warm milk, cover with a cloth and let stand for about an hour in a warm place. Roll out cut with round or shaped cutter &#038; bake on lightly greased or sprayed sheet at 350 degrees until they are golden brown. For other treats serve a variety of breads, cakes &#038; cookies. Serve sliced banana bread, shortbread cookies, your favorite holiday cookies, lady fingers, lemon cookies or biscuits, orange cake, peach or strawberry tarts or tartlets, petit fors, applesauce cake, brownies or fudge, carrot cake, gingerbread, or tiny cupcakes.</p>
<p>TEA PARTY THEMES</p>
<p>Do you need an excuse to have a Victorian Tea Party?? Next time you host a baby or bridal shower, make it a tea party, a birthday party for a friend, a Christmas tea is always beautiful. Host one for your ladies group at church or ladies Bible study. Celebrate an anniversary, invite over your grandma, or granddaughters, let your little girl invite her friends for a fancy dress up day! Combine a tea party with an etiquette class, have a garden tea party in the summer, and of course there is always Valentine’s Day, my favorite. </p>

			<content:encoded><![CDATA[<p>Scallops are a very popular type of seafood and one reason for that is because scallops are very versatile. Scallops can be prepared in so many different ways, including sautéing, grilling, broiling, baking and stir-frying. Whatever way you choose to prepare scallops, you should take care not to overcook them in order to keep their delicate texture. Scallops are done when they turn opaque, losing their translucence. </p>
<p>Scallops can be used to prepare delicious pasta or risotto dishes for instance. You can also combine scallops with other seafood such as shrimps. Below you find good examples:</p>
<p>Linguini with Scallops, Shrimps and Sun-dried Tomatoes</p>
<p>Ingredients:<br />
1 pound linguini<br />
1/4 cup olive oil<br />
1 stick butter<br />
4 garlic cloves, minced<br />
1 pound shrimp, peeled<br />
1 pound sea scallops<br />
1 bottle clam juice<br />
1/3 cup sun-dried tomato paste<br />
1/4 cup fresh parsley, minced<br />
Peel from 1 lemon removed in strips<br />
Salt and red pepper flakes</p>
<p>   1. Directions:<br />
      Bring a large pot of lightly salted water to a boil. Add linguini and cook for 8 to 10 minutes or until al dente. Drain.<br />
   2. In a pot, melt butter and olive oil. Saute garlic until tender.<br />
   3. Add shrimp and scallops. Saute until shrimp turns pink and scallops are almost cooked about 10 minutes.<br />
   4. Add clam juice, salt and pepper. Add cooked linguini and cook about 3 minutes more.<br />
   5. Add tomatoes, parsley, lemon peel and toss pasta well. Serve immediately. </p>
<p>Black Pasta with Scallops</p>
<p>Ingredients:<br />
7 ounces black squid ink pasta<br />
8 large sea scallops<br />
1 lemon<br />
2 tablespoons olive oil<br />
1/4 cup white rum<br />
salt and freshly ground peper to taste</p>
<p>   1. Directions:<br />
      Cut the scallops horizontally in half and season with salt, peper and lemon.<br />
   2. Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain.<br />
   3. Heat olive oil in a frying pan, add scallops with part of the seasoned liquid until golden brown. Pour white rum over the scallops, and and carefully light with a match. Let the flames burn off, then add pasta tossing gently and evenly. Serve it. </p>

In that case, a healthy brunch would be a good idea to satiate those hunger pangs and not feel guilty about waking up a little late! Well, take a look at these food recipes for brunch time and perhaps, getting up in the morning and cooking may not be a cumbersome task anymore!</p>
<p>Brunch Recipes:</p>
<p>Delicious Scones Recipe</p>
<p>Ingredients<br />
All-purpose flour (2 cups)<br />
Sugar (1/3rd cup)<br />
Salt (1/2 teaspoon)<br />
Raisins (1/2 cup)<br />
Sour cream (1/2 cup)<br />
Baking powder (1 teaspoon)<br />
Baking soda (1/4th teaspoon)<br />
Large egg (1)<br />
Unsalted butter – frozen (8 tablespoons)</p>
<p>Preparation<br />
Preheat the oven to 400° F but before you do so, you need to adjust the oven rack to a middle position. Take a medium bowl and mix flour with baking powder, baking soda and the 1/3rd cup of sugar. Sprinkle with some salt as per the taste required. Then, grate butter in the flour mixture. Blend this well, till it forms a coarse mixture. Now, add the raisins as well. Your next step would be to mix the egg with sour cream in a bowl. Blend well, till it turns into a smooth mixture.</p>
<p>Now, you need to stir the sour cream mixture into the flour mixture prepared earlier. Knead this dough and shape it into a ball. Next, place it on a lightly floured surface. Pat the dough so that it forms an 8-inch circle. Sprinkle a teaspoon of sugar above this. Now, cut the circle into 8 triangular shapes. These triangles should be placed an inch apart on a cookie sheet. Bake these till they turn golden brown. Serve warm with a hot cup of tea!</p>
<p>Chocolate Muffins Recipe</p>
<p>Ingredients<br />
Baking cocoa (2/3rd cup)<br />
Large eggs (2)<br />
Flour (2 cups)<br />
Sugar (1/2 cup)<br />
Milk (1-1/3rd cups)<br />
Vegetable oil (1/3 cup)<br />
Vanilla (1 teaspoon)<br />
Salt (1/2 teaspoon)<br />
Baking soda (2 teaspoons)<br />
Chocolate chips (1 cup)</p>
<p>Preparation<br />
Preheat the oven to 400° F and coat the muffin tins with cooking spray. Meanwhile, in a large bowl, combine the flour, baking soda, cocoa and vanilla. Sprinkle with some salt and sugar and add half cup of chocolate chips. Now, take a separate bowl and add the eggs with milk. Add this mixture to the other ingredients. Pour the batter evenly into the pan and sprinkle the remaining amount of chocolate chips over this. Bake it for 20 minutes and let it cool down. Remove from pan and serve!</p>
<p>Stuffed French Toast</p>
<p>Ingredients<br />
For the filling<br />
Cream cheese (8 ounces)<br />
Finely ground pecans (1/4 cup)<br />
Apricot preserves (You can use strawberry jam – 3/4 cup)</p>
<p>For the batter<br />
Eggs (4)<br />
Milk (1/2 cup)<br />
Vanilla (1 tablespoon)</p>
<p>French bread or Italian bread (1 loaf)</p>
<p>Preparation<br />
Combine the cream cheese with jam and the finely ground pecans in a bowl. Then, cut the bread into diagonal pieces. Next, you need to cut a small area of the bread in each slice and place the cream cheese mixture in this. Mix eggs with vanilla and milk in a mixing bowl. Then, heat a frying pan on medium heat. You now need to melt 2 tablespoons of butter in the pan. Place each toast in the egg batter and then onto the pan. Cook till both sides turn a shade of brown and serve.</p>

Today, I prepared scones with oats, cornmeal and with grated orange zest as egg less also low fat version&#8230;Scone is a bread like biscuit, it is made with wheat, oatmeal usually with baking powder as leavening agent&#8230;The scone is doughier than American biscuit and frequently includes raisins, currants, date, and also with nuts.. This scone can also prepared as savory varieties with cheese, onion etc..Scones sold commercially are usually round in shape. When prepared at home, they take various shapes including triangles, rounds and squares. Coming to my egg less and low fat scones, i replaced the egg with apple sauce and i just used 3tablespoon of canola oil, this scones turned out prefect also healthy and really tasty with a crunchy texture coz of cornmeal i used in this delicious scones..</p>
<p><strong>Ingredients:</strong></p>
<p>2cups Quick cooking oats<br />
1/2cup Cornmeal<br />
1/2cup All purpose flour<br />
1tsp Baking powder<br />
1/2tsp Baking soda<br />
1/4cup Sugar<br />
3tbsp Grated orange rinds<br />
1/4cup Almond nuts (chopped roughly)<br />
1/2cup Applesauce<br />
3tbsp Canola oil</p>
<p>Mix together quick cooking oats, cornmeal, all purpose flour, baking powder, baking soda, sugar, grated orange rinds, apple sauce, canola oil and chopped almond nuts and turn everything as dough&#8230;.Dust the dough with few spoons of all purpose flour… roll the dough with a rolling pin as a thick disc.. with a knife cut the disc into 8 wedges..</p>
<p>Transfer the wedges to a cookie sheet, leave  at least few space between the scones, meanwhile preheat the oven to 425F..brush the tops of the scones with canola oil&#8230;bake them for 20 minutes r until they get slightly browned&#8230;</p>
<p>Let them cool.. serve them with coffee r tea.. simply with any spreads..</p>

<p>You need to cube the butter and rub it into the flour until crumbly. Then add in the milk.</p>
<p>Rub the butter into the flour until it looks like bread crumbs</p>
<p>Knead it into a smooth dough. Then pat into small round shapes (the size depending on you, I like bite-size scones so I made them really small) and place on baking tray. Sprinkle them with some flour and then bake them.</p>
<p>Form small round shapes and place on baking tray</p>
<p>Dust with some flour</p>
<p>Scones are best eaten with some nice jam and cream.</p>

<p>Oh and yeah, they are damn good hot from the oven!!</p>

<p>Ingredients:</strong></p>
<p>1 1/2 cup plain flour</p>
<p>40g butter, cubed</p>
<p>1/2 cup milk</p>
<p>3 tsp baking powder</p>
<p>Instructions</p>
<p>1. Preheat the oven to 200°C.</p>
<p>2. Rub the cubed, softened butter into the flour until crumbly.</p>
<p>3. Make a well in the centre and pour in the milk.</p>
<p>4. Mix with a spatula until it forms a soft dough.</p>
<p>5. Take the dough and knead it on a floured surface but don’t over-knead it.</p>
<p>6. Shape it onto small rounds and place on baking tray. Sprinkle with flour.</p>
<p>7. Bake in the oven for about 20 minutes.</p>
<p>These scones are best enjoyed hot from the oven with some fresh cream and jam.</p>
